I would have to say Ganon in LoZ or ALttP. You couldn't defeat him in these titles unless you had silver arrows. There were no places to hide either. Ganon in LoZ would turn invisible and spit fireballs at you and in ALttP, Ganon would teleport around the room.

Okay, so what can I not defeat no matter how hard I try? Wallmasters from the original game! You couldn't kill them in that title and as long as you're in a room with wallmasters, you're in danger of getting grabbed. And in that game Link is a child.

You can kill wallmasters in the original... you had to in one the dungeons...
