I really like Not Take Mirror's answer, so I will just pick one each.

Easiest: Dodongo

Funniest: Ook and the mighty azz slap (mini-boss)

Funnest: KOLOKTOS! words cannot express how much I love that battle

Boringest: Stagnox- I feel like I have to wait forever for him to poop out the spiky bombs.

Hardest: Bongo Bongo- I envy those who say he is easy. Every time I've battled him I either die once or get really low on hearts. Always hurts my zelda ego a bit...

Easiest: Darkhammer - Twilight Princess

I'm giving the early bosses a pardon since they're meant to be easy, so that means that Darkhammer takes the crown. This guy is incredibly easy; I shouldn't beat a boss - mini-boss to be fair, but still considered a boss - in the fifth temple of the game in under 30 seconds. All you have to do is hookshot over him and slash his back while he just sits there and lets you attack him, and you only have to do this twice. He's an awesome allusion to the Ball and Chain Trooper of A Link to the Past, but my god is he easy.

Most Fun: Stallord - Twilight Princess

The Spinner is perhaps my favorite item in the Zelda franchise, and that alone was enough to make this boss battle a blast. The second phase is really where this battle shines, and I can't imagine anyone not having a thrill jumping between the central tower and outer wall of the arena with the Spinner and knocking the colossal fossil's head out of the sky.

Most Boring: The Imprisoned - Skyward Sword

Slashing at toes isn't exactly my idea of fun. And when you have to do nearly the same battle three times in the game, it makes the battles not only boring, but tedious. The concept of The Imprisoned trying to escape was cool, but these battles were unbearable.

Hardest: Gohma - The Wind Waker

Allow me to explain this one. As I said in the easiest category, the later bosses in Zelda games are meant to be difficult, and the early ones aren't; that's what puts this boss fight into perspective. This battle would be easy under certain circumstances, but when the player only has three hearts, it's a rather difficult battle. Gohma is also much more aggressive than any other first boss, and deals a high amount of damage considering the aforementioned mere three hearts the player has.

These are by no means my true answers, it's just what I'm able to remember right now (as in, if I thought about it longer, I'd probably have different answers)

Easiest: ehhh...Zant from TP...actually almost every boss in TP

Funnest: Stallord from TP, Zant from TP, Final stage Ghirahim..probably more that I can't remember

Boringist (lol): First stage Ghirahim. I had a lot of problems with the motion-control in the beginning (it got progressively better). I couldn't keep him from grabbing my sword, so for a whole twenty mintues or so it was just Ghirahim holding my sword and me getting really frustrated. There might have been a glitch....or I might just be stupid.

Hardest: Demise from SS. I know y'all probably think I must be an idiot for thinking he was hard, but I remember he just kept doing the charging thing at me, leaving me no room whatsoever to absorb lightning. So my strategy was to run like a mile away from him, absorb lightning, and then strike him as he charged up to me. It took me a while to figure that out, so I died quite a lot.

this is from the 3D games.

Easiest: Gohma OoT, record time on 3DS boss gauntlet is 22.63.. any boss that can be beaten under 2 minutes is deemed easy to me. OoT and TP and the easiest bosses of the 3D games IMO

Funnest: tie between Twinrova OoT, Argorok TP, Goht MM

Most Boring: Twinmold MM, ugh they just roam around the arena like flying worms... or more exactly as flying worms... nothing to the battle, super easy with the Giant Mask

Hardest: Demise SS, I died many times before figuring out that you needed to charge your sword in the second phase of the battle

Easiest
I was going to say MM's Goht, however, even though I don't run into real trouble, there are times where he'll catch me with his stun. And before I got rediculously good at MM, there are several things he would do to slow down my eventual victory. Thus, the easiest Zelda boss is a tie between SS's Tentalus and TP's Morpheel for me. Obvious strategies as well as ones very easy to pull off. I considered the other bosses in TP, but I've seen non-Zelda players actually struggle with some of these and Fyrus did actually take me a minute to figure out.

Funnest
Well, this is no contest for me. TP Ganondorf easily. Everything about that fight, right down to the cut scenes, was enjoyable. First, a nostalgic battle of tennis with Zelda, the beloved princess you came to save. Then, switch to a predicted yet at the same time unexpected beast on beast battle with Ganon. After your new BFF is killed and Zelda suddenly becomes helpful, you get a classic princess and knight vs tyrant king. And then... the epic battle we always wanted. A one on one sword fight with the G-man himself. All along the way we get epic music, meaningful cutscenes, and Link looking incredibly epic. My favorite boss fight and easily the funnest.

Boringest
Moldorm from ALttP. Even though it took me a couple of minutes to figure out what to do, this fight felt rather anti-climactic and rather hack-and-slash-ish.

Hardest
Dark Link from AoL from shear cheapness. However, if we exclude all bosses from that game then I'd have to say Gyorg from MM. The strategy to beating this boss was extremely difficult because you always put yourself at risk when you went into the water to attack. The key to winning when doing water attacks was knowing exactly how to swim, and while MM has some of the best swimming mechanics I've seen in video-games, mastering that Mikau was no easy feat. Thus, people got eaten time after time after time.

Easiest: Morpha (OOT): Literally killed Morpha in 10 seconds flat. (Given I had the Biggoron Sword at the time)
Funnest: Puppet Ganon (WW): Puppet Ganon was not only fun, but a unique boss in the series.
Boringest: Giant Poe (WW): I just didn't enjoy this boss altogether.
Hardest: Twinrova (OOT): Beating twinrova in OOT was a struggle for me. I only had three hearts left when I got to the Twinrova stage of the boss, and I truly had to put in much effort to win.
That's all, folks!

Easiest: Odalwa, from Majora's mask. He isn't that easy at first, but ones I get the Great Fairy's sword & come back & beat him, it probably took me 3 seconds after I sword spin him. & if you get them in a chain, its even quicker.

Hardest: Cagrock, from Zelda2 is the hardest. It took me forever to realize you need to reflect things back to him. He's untouchable otherwise & immune to anything else you do to him

Most Fun: Demise from SS. Some people don't like Demise cuz of how fast you could beat him. But I remember when it was more challenging to defeat him. It was fun having a one-on-one sword fight with the great demon king, & it was certainly better that Ganondorf in TP (not that I don't like his last phase). The atmosphere was amazing too. Lightening everywhere, cold water splashing on your legs as Demise tried to fry you & shred every piece of skin off of you. Doesn't that sound like a good, heart-racing battle to you?

Most Boring: King Dogongo or Big Dodongo or whatever his name is from OoT. All you need to do is dodge & throw a bomb at him, then spam jump attack. You're done in less than a minute.

Most fun: Stallord (TP). I thought this was a great use of the spinner
Easiest: Cagrock (AoL). The only boss that I know of in the series where the victory condition is to squat in the corner.
Hardest: Depending on how overleveled you are, the Blue Darknut at the end of level 3 inAoL is a brutal beast. Otherwise, I hated Puppet Ganon's third form in TWW... but I found that hard because of the clunky bow mechanics
Boring: Pretty much every boss from TWW

When I select my choices for all four categories, I'm going to judge them based on my own personal experiences as a player with no prior knowledge to the boss fight (essentially I'm judging them from my first experience).

Easiest - Gohma from Ocarina of Time

Is it two jump attacks with your Deku Stick to kill Gohma, or three? Either way, my first time playing through the game I used Deku Sticks to kill Gohma and it was over in like eight seconds. I was dumbfounded, and actually thought it was a mini-boss until I saw the heart container.

Hardest - Molgera from The Wind Waker

No boss has ever given me so much trouble -- and still gives me trouble to this day -- like Molgera. Hookshotting its tongue without getting too close is nearly impossible to do; it's easy for you to underestimate the distance between the two of you and than you get sucked up and chewed on for two whole hearts. For a Zelda game, and especially for The Wind Waker that is widely regarded as one of the easiest Zeldas in the franchise, that's pretty incredible. Plus you have Molgera's babies to deal with... overall a very challenging and well done boss battle.

Most Fun - Helmaroc King from The Wind Waker

Something about fighting an overgrown rooster just seemed like fun to me the first time around. It was like I was getting my revenge from all of the cucoos that plagued my dreams from when I was a little kid playing Ocarina of Time.

Most Boring - The Imprisoned

The actual mechanics of the fight is boring, and the fact that we have to do it multiple times is just simply God-awful.

Now if I were to rate these bosses now, knowing how to beat them, my choices would look something like this:

Easiest - Demise
Hardest - Molgera
Most Boring - The Imprisoned
Most Fun - Gohma (WW)
