The three deku scrubs in the Deku tree. You just paralyze them, not defeat them and there is a riddle that you have to 'figure out' to beat them. Being the mystery of how to get past them. They fire deku seeds at you. I'm not sure about the 7 and the 8 though.

Another wild guess... a Poe, you can't defeat them with a sword in TP, you had to be Wolf Link, which you also needed your senses to see them. As for your seed hint, I don't know how they tie in...

I'd say it has something to do with the oracle series with the "mystery" and "seeds" as well as the 8 reference considering that there are 8 essences for each game so maybe Plasmarine? It can't be killed except by it's own projective attack and it is the seventh boss.

The Red jelly/red tounges. You have to stun them with your bomorang, you can't actually kill them, they come back to life after a few seconds.
