I do believe in a Deku Family. The thing about multiple Deku Tree's, I think there are. I wouldn't say they have there own 'Kokori Forest' surrounding them, for example I wouldn't really call the area around the Deku Tree in WW a full blown out forest, just a watered down size of it's siblings...

In OoA, the first boss, Aquamentis, was so easy it's not even funny. All I did was mash my B-button at it's horn for about 20-30 seconds rofl The mini-boss was almost the same if not harder in that dungeon. Eh, I can't really rant much though, considering it's only the first dungeon.

The beedle and the children do seem quite lazy and Nintendo could have done quite a bit of work on them. But IMO I wouldn't call them lazy. They just need to think over a few things.
