Bright-Eyed Crab is a type of crab and common material found in Breath of the Wild, Age of Calamity, and Tears of the Kingdom.
Breath of the Wild
"This crab appears in large numbers when it rains. One bite of its delectable meat, and you'll forget all your exhaustion. Replenishes your stamina when cooked into a dish."
Bright-Eyed Crabs can typically be found on beaches near bodies of water around Hyrule such as the Lanayru Great Spring or Eldin Canyon. They can be sold to shop-vendors all over Hyrule for 10 Rupees each.
The Bright-Eyed Crab will restore one heart when eaten. If cooked on an open flame, Link will obtain a Blackened Crab, which restores 1½ hearts and can be sold for 12 rupees. If dropped on the ground in extremely snowy climates, Link will obtain a Frozen Crab, which restores two hearts and provides a temporary boost to heat resistance for one minute. It can be sold for 14 rupees. Bright-Eyed Crabs can be used in a variety of recipes, and the resultant meal will provide a stamina recovery effect.

Bright-Eyed Crabs are mostly found in Lanayru Wetlands, with a significant number found in Zora's Domain and Ulria Grotto South Cave. Outside of Lanayru, they can be found around Rutile Lake.
They are the subject of the A Crabulous Deal side quest, as Cleff has become obsessed with them after eating one while Zora's Domain was covered in sludge, and will trade a sapphire for ten of them. After this, he "will make a trade for some products that are equal in value to the number of crabs you shell out" - offering either an opal for five, or a diamond for 25. He describes the experience of eating his first one with the words "Yes, the spikes were incredibly painful! But once I was able to transcend the pain, there was magic awaiting me... No, more like it was greeting me with a warm hug of savory umami goodness!"
Their main benefit is when cooked into meals in a Cooking Pot, where they create Energizing meals with a Stamina Recovery effect. Otherwise, when eaten raw a bright-eyed crab heals one heart; cooking on an open campfire creates a Blackened Crab which heals a basic 1½ hearts; while dropping one in freezing water or in level 2 cold areas creates a Frozen Crab, which restores two hearts and provides level 1 Heat Resistance for one minute when consumed.
