Left: Hook/Long Shot
Down: Ocarina

I don't know why but I also always keep my Ocarina on the left

Here's my configuration at almost all times:

Down: Ocarina of Time (OoT/MM)
Left: Hero's Bow (OoT/MM)
Right: Hookshot (OoT), Bunny Hood (MM)

These items are almost always equipped to my C-Buttons. They are the items that I use the most in the respective games, so to use them and be more efficient, I just leave them there all the time.
