No. I think the Royal Family have rupees in the quadrillions as is shown by the wanted and reward posters in Hidden Village TP. They simply have no need to tax but have the wealth to employ any services they need for thousands of years including building of castles and armour making.

Resources are abundant in Hyrule any anyone has easy access to materials for crafting so lots of buildings are passion projects and not tax funded, instead they are commissioned by local people and because villagers spend in their local economies local businesses such as builders or potion shops are always kept afloat.

It is very difficult to starve in hyrule as food is cheap and in abundance. I would expect the people would reject taxes and rebel should the royals try to impose them.

I'd have to disagree, all of those evidence doesn't indicate that they don't pay taxes, in fact every civilization that had wanted posters and resources to build things, also had to pay taxes.

The absence of any mention of taxes in the games is the biggest indicator they don't pay taxes.

As I have said before, the royal family is so rich that they definitely don't need to demand taxes, especially of rupees. ever. They can afford to buy anything they want. That is very good evidence that hylians don't pay taxes because the amount of money required to even make a dent in the vast wealth of the Hylian royal families existing fortune could never be obtained by the collective of all Hyrules citizens for probably thousands of years because there just aren't many people living in Hyrule and the amount of money Hylians make isn't very much.

I would also like to point out that income tax did not exist before the 1700's in Europe and since Zeldas society is generally going for a medieval fantasy European vibe, income tax is also unlikely.

I will admit it is possible the crown asks for something like 1/10th of a farmers pumpkins or of a woodcutters wood. They don't have any collectors or a military presence in a lot of towns so whether they could enforce this is questionable. However people may feel loyalty to the crown and voluntarily donate.

Thinking deeper into it tax in the modern sense for Hyrule is almost definitely not a thing. But I could get on board with the idea of donation of goods to the crown.

Now comes the real evil.

It isn't Ganon or Demise, but something far more evil that is Malice incarnate.....

And that's taxes and tax assessors.
