Night is the time when the sky is dark and the sun is not visible. Most The Legend of Zelda series games exclusively take place in daylight, but the 3D games in particular make use of the change between night and day as a game mechanic.
Appearances as a game mechanic
Ocarina of Time
Link can play the Sun's Song written by the Composer Brothers to change the time from night to day, or vice-versa.
Many shops and businesses shut at night, but the Bombchu Shop and Treasure Chest Game in Hyrule Castle Town are exclusively open at night.
Overworld Gold Skulltulas often appear exclusively at night, while Stalchildren dig themselves out of the ground in Hyrule Field at night during Link's childhood.
