Zelda: Twilight Princess for me would be a perfect anime.

Fire Emblem: Nintendo did one of these a while ago but I want a full length one based of Fire Emblem Engage.

Triangle Strategy: My underdog pick. But it could work they can just rip the character profile art and then animate them.
