Idk, he seems more like a Dubious Food kinda guy to me.
He is truly evil, if he prefers dubious food over a steaming, tender, juicy, piece of steak.

Anything big enough to eat with his trident.
He snorts crushed bones for that protein and mind altering drugs mixed in (of course) with his bigggg nose. It took a terrible toll though.

Ganondorf likely ate human flesh to sustain his mass and given his murderous nature it was probably what he enjoyed the most. He was 7ft 6 and I'd guess he was 600lbs of muscle at least. During OOT the gerudo possess a single cow and the man would need an enormous amount of calories and protein to get to his size and keep it. This is why I think the only available food source during OOT that would allow him to be so big is human flesh.
After obtaining the triforce I would imagine that it's energy alone sustained him and he no longer needed to eat.
