The most logical answer is that since ALttP came out before the Zoras were clearly defined in OoT, Nintendo didn't have a clear idea of what they were doing. In-universe answer, perhaps they grew sick of the Hylians over time. Happens.

Yeah, this.

I really don't think any other explanation makes sense or is worth it. And realistically, even if they did come up with a canonical explanation, this theory is most definitely how it started. There's no way they planned the change.

There's a theory floating around they they're female Zoras who are violent (?!), but there's absolutely no solid evidence for this. I don't know where it originated, but it's most definitely not proven.

Pretty much what PJDEP stated. Really, back then they were just throwing enemies and stuff all over the place... no real idea of a timeline back then. As games were developed more and more over the years, so was the history of Hyrule and its races. In OoT, they seemed pretty close with the Royal Family, as did the Gorons. In TP, eh... they weren't against each other, but that closeness seemed lacking. Maybe with future games they'll show some sort of falling out among the races.

Zola:
Zola is the name given to any female Zora who turns against Hylians and chooses to live a life of violence. They normally hide underwater, then spit fireballs at anyone who walks by.

The information originated from Zelda Universe- not the fan-made one, but the official website owned and licensed by Nintendo (www.zelda.com). It's in their Encyclopedia. Some people consider this information canon while others don't. *shrug*
