Depends on which Link. I'm sure after MM, Link became rather cynical, whereas SS Link likely became more of an idealist.

Skyward Sword model and I think his speed will be increased.

Blond or dirty blond. Even though his hair was originally brown, blond hair has become more iconic now.

There is a glitch that allows you to skip it in the N64 version. It was patched up in the 3DS version.

The Twilight Princess movement was perhaps the biggest surprise. I didn't expect it to be that epic. As more my personal favorite, I'll say Gerudo Valley. I dunno, it sounded really cool to me- kind of like it would be music for a prison break scene or something.
