While Snake Statues can be found in the Gerudo Sanctum, and Zelda can scan them with the Tri Rod to learn a snake statue echo, the echo serves no purpose - it exists only as a red herring for a puzzle that requires the Elephant Statue Echo and Hawk Statue Echo. As they do not serve any other purpose which the "proper" statues can't, the only reason to scan them is as part of collecting all 127 echoes.
