A Mini-Boss is a special enemy that generally appears midway through a dungeon. When Link has defeated a mini-boss, he is rewarded with an item which is often the dungeon item. Sometimes, there is not a mini-boss in a dungeon at all or more than one mini-boss appears in a dungeon.
