Deku Baba Echo is one of the many Echoes from Echoes of Wisdom.

Echoes of Wisdom

"Aggressive and immobile, this plant reaches for anything that gets near. It is vulnerable to having its head pulled."

Echoes of Wisdom in-game description

After Zelda defeats a Deku Baba a Shimmer appears, which Zelda can examine to learn the Deku Baba Echo. Similar to the enemy itself, these enemies are immobile, and thus make them impractical for fighting many enemies. They are very aggressive, however, and will defeat many weaker enemies.
