Adding fish with stat-boosting effects may create variants with those effects - for instance, using Bright-Eyed Crab in addition to or instead of the Hyrule Bass or Sanke Carp would make Energizing Meat and Seafood Fry.
If ingredients carrying multiple different effects are added, they will cancel out and leave the result as plain Meat and Seafood Fry. There is no benefit to cancelling out effects in this manner.
