Tears of the Kingdom In-Game Description

Cheesy Baked Fish is a piece of food found in Tears of the Kingdom. When eaten, Cheesy Baked Fish restores a variable number of hearts. Cooking under a Blood Moon may increase this effect.

It can be made in a lit Cooking Pot with any fish, crab, or snail, along with some Hateno Cheese. Using a fish, crab, or snail with an effect may produce a variation such as Energizing Cheesy Baked Fish (Staminoka Bass) or Hearty Cheesy Baked Fish (Hearty Bass). Using ingredients with conflicting effects will cancel out and produce regular Cheesy Baked Fish.
