OoT/MM Poe has my vote:

When I think poe, the OoT official artwork immediately comes to mind and it is some of the best official art for any Zelda game ever. The swirling sound they make as the fly around, the swish as they appear and disappear, their incorporeal drifting through walls, the shattering lanterns when they die, the scream of their souls as Link picks them up, the weirdness of drinking their remains for a chance at gaining or losing life, the side quest with the creepy collector, big, regular, unleaded poes...I think they've got to be the most complex enemy in Ocarina of Time.

The Ocarina design is probably the most easily recognizable, but WW's is so silly it's impossible not to love it.

I love WW's Poes, they're so silly.
In terms of creepiness, though, nothing beats TP's Poes. Especially the big ones...
