Kotake for sure.

I remember seeing her in the shop for the first time and wanting to pull my sword on instinct.

I'd go with the part-timer, due to his personality and general attitude and the fact that you're able to knock him out of a tree in Termina Field when he isn't actually working.

I’m going with the trading post man.

He constantly has an itchy back. I feel sympathetic to him. He also runs the curiosity shop, making it seem like he leads a double life. They way he says Heeeeey always makes me chuckle.

Kotake is the most unique out of them all, imo. Especially since she was a boss in OoT, it's a weird twist to see her be a shopkeeper.

I like the bomb shop owner because unlike several shopkeepers in the series, he can sell you bombs and a bomb bag immediately at a reasonable price. I think it's weird how the series has constantly flipped between bombs being a common tool readily available and a dungeon item.

It's Kotake for me as well. It just felt so weird being able to talk to and buy things from a former boss. Also she gives you a free bottle, so that's nice ^^
No love for the Goron or the Zora so far, but I get why. Those are the most optional shops there ever was XD
