Epona and loftwing please.
I'd like more modes of transportation- Epona and a boat would be great, and some sort of flight traveling late in the game would be cool.
However, I only want it if there's a big enough over world that warrants it. If we're not going to have a massive over world, then it would just be overkill. Oh, and I do want bigger over worlds, FYI

This is a very interesting thought and now that you say it, I think I would very much enjoy multiple modes of transformation. After all you cant realy ride a horse across a lake... unless it's a pegasus that is... There should be a pegasus in Zelda...
