Why stop there? Give Disney a run for its money and go with a Nintendo theme park. Imagine seeing Mushroom Kingdom and Hyrule Kingdom alongside each other. Donkey Kong Country, Pokemon Land, Kirby's Dreamland, Sector Z (Star Fox, Metroid, Cpt. Falcon), Eagleland/Onett, and Lego City?

Teehee, I think it was back in eighth grade my little group of friends and I were discussing something like this. I think it'd be easier to have a Nintendo-based theme park rather than on just one franchise, but yeah. It's a cute idea, but would be difficult to pull off without making things awkward.
I could definitely see some of the minigames and puzzles from the series come to life at an amusement park. And Salvatore-esque instructions on how to play each. x) As for rides and coasters, we could probably do something with Skyward Sword's "rickety coaster" for one and stuffs. From the discussion three years ago, the only ride idea I can recall was the Goron Mine Ride, but most of them were punny like that.
Zelda-fied haunted houses would be fun, though. With redeads, wallmasters, and dead hand... oh my!
