Considering that people transform into something that reflects their personality in the Dark World (for example, Link turns into a pink bunny, but why? Is he a gentle giant?), does Ganon turn into anything? Probably so. He only really turned into his Pig Form in 4SA. That was when he got the Trident of Power and created the Dark World. So, after seeing a thread about Ganon's Beast form being his Twilight Form, as Link's wolf form is his, it made me think about this.
I think Ganon's form as a pig completely reflects his personality. Pigs are known for being gluttonous, greedy, and generally uncaring. Not only that, but Ganon has tusks, making him more of a boar. A boar is a pig, only more powerful and more physically fit. Considering Ganon wished for a world that would immobilize his enemies, and that made a suitable corruption of the Light World, it can be assumed that Ganon wanted a form of total darkness, in other words, a corrupted form of his human self. Considering he uses the Triforce of Power to turn into something incredibly powerful at the end of OoT and near the end of TP, after which he turned back into his human form, we know he can change forms at will. Strangely, he doesn't seem to want to in the Dark World. Maybe because this form was more powerful? Or maybe because he didn't have the Moon Pearl to allow him to change back as needed. And when he died, he came back in his Pig Form in TLOZ, meaning now he's stuck in it. So, basically, without the Moon Pearl and having been killed and resurrected at the end of ALttP (where he unwishes everything that happened in ALttP (the king and his uncle died (the king was eliminated), but they "recovered" or "returned," and Flute Boy turned into a tree, but he was alive and well in the ending), he is now and forevermore stuck as a gluttonous, greedy, and power-hungry pig. And his desire for power and destruction/darkness/corruption is reflected in the Oracle games, where, when he is resurrected by the Gerudo, though insane, he resolves to destroy everything.
