Music is one of the things I look forward to when I play a Zelda game for the first time (I'm specifically excited for WW's music).
All of the ones I've played each have some great, catchy music. But I think I'll go with Skyward Sword's epic orchestrated music.
Yeah, an ice dungeon would've been nice, even an entire snowy region.
Besides originality and all that, I actually really enjoyed the Fire Sanctuary more than most of the other dungeons is SS. The core dungeon/puzzles were pretty cool. I thought the Mogma Mitts were okay, and Ghirahim II, while...
There have been plenty of times where I repeatedly fall into the same abyss in certain dungeon rooms, specifically in ALttP. But also that one room in the Spirit Temple with the Beamos and those other creatures that hate fire (forget what they are called).

Others that come to mind include the Sandship (I didn't really realize it was a dungeon until I fought the miniboss!), Ancient Cistern, Snowpeak Ruins, and Skull Woods.
I usually prefer to get Imprisoned 2 over with at the beginning. I found that one really annoying when I first tackled the lightning round, but now it's not a big deal.
Just finished Skull Woods, which started to drive me crazy, as I couldn't defeat the boss. Then I found out it's recommended to buy the magic/green potion, which helped out a lot. :)
Based on what I played:
Skyward Sword. I find orchestrated music was so moving and so epic. This has to be No. 1 for me.
I'm looking forward to music in Wind Waker when I first play WWHD (I don't want to the music yet before I play :))
